Part 110 - A Couple of 'On This Day In History' Items & My Favorite Salmon Recipe
I had plans to write a follow-up to my March 17 post with caregiver tips and suggestions. It isn’t going to happen. I just don’t have the energy. I woke up this morning feeling a bit blah. Later, I walked about one mile and a half to have new lenses put in my glasses. I think I over exerted myself. Big Bit and I have been napping this afternoon.
Not to worry though, I have a couple of things for you on this Friday.
On this day in 2016, Barack and Michelle Obama visited Cuba. President Obama was the first United States President to visit Cuba.
March 20, 2003 ground troops (A.K.A boots on the ground) invaded Iraq. Approximately 130,000 troops from the US, 45,000 from the UK, 2,000 from Australia, and 194 from Poland participated in the initial invasion.
On a happier note, on this day in 1930, Harland Sanders started selling his world-famous chicken, from a Route 25 gas station near North Corbin, Kentucky. KFC was born. Damn good chicken, but certainly not heart and brain healthy.
My final words today are about healthy food. Many years ago, I created a salmon with mango salsa recipe. It has stood the test of time. I hope you will try it and let me know if you enjoyed it. Are you surprised to learn that I cook?
HERB-GRILLED SALMON WITH MANGO SALSA (A Greg Rowland Original)
MANGO SALSA:
1 cup peeled ripe mango (chopped)
1 cup sliced banana
¼ cup fresh mint
2 tablespoons orange juice
1 teaspoon grated lime rind
1 tablespoon fresh lime juice
1 cup fresh pineapple (chopped)
1 Serrano chili, seeded and finely chopped
SALMON FILLETS:
4 salmon fillets (about 1 inch thick)
¼ cup chopped cilantro
¼ cup chopped fresh mint
1 teaspoon olive oil
1/8 teaspoon ground red pepper
½ teaspoon salt
¼ teaspoon black pepper
To prepare salsa, combine all ingredients, cover, and refrigerate overnight.
To prepare salmon fillets, combine salmon, cilantro, mint, olive oil, and red pepper in a large plastic bag. Seal and shake gently. Marinate in refrigerator for 20 minutes.
Remove salmon from bag and sprinkle with salt and pepper. Cook on grill for about five minutes on each side.
Serve with salsa and white rice.
